Harding Road Campus Students Compete At The 13th Annual Cooking CompetitionThree cooking students from the Harding Road Campus took part in the 13th Annual Culinary Competition at the College of the North Atlantic on November 21, 2009. The Canadian Culinary Federation, St. John’s Branch and the Chicken Farmers of Newfoundland and Labrador hosted this competition. Aspiring chefs Alison Starks, Liam McNamara, and Paul Templeton competed in this type of competition for the first time. They competed against students from the College of the North Atlantic as well as chefs from St. John's finest restaurants. The students were given a black box of ingredients to create a three course meal with the main protein being chicken. For an appetizer, our students served Salmon and Scallop Mousselline, dressed in Leek with Sweet Potato Purée and Roasted Beetroot bundle. The main course was Chicken Galantine and Beurre Rouge served with Fennel Risotto in a Red Sweet Potato Crib and Sweet Brussels Sprout Almandine. Finally, the dessert consisted of a Sweet Tuile drizzled with Clementine and Chocolate Beetroot Glazes. Although our aspiring chefs not win, they completed their appetizer, main course, and dessert with flying colours. Students felt they learned a lot from the competition and competing alongside some well known Chefs. Special thanks to Catherine for volunteering her time with the Academy Canada team.
