Add Some Spice To Your Career

Academy Canada Cook (Pre-Employment) Instructor, Bernie Ann Ezekiel, taught at our Harding Road Campus in St. John’s since 2010. During that time, the Red Seal-Certified Chef has taught a wide range of students.

Her students range in age from 17 to 64, with a majority of them in their 20s or 30s.

While most of Ezekiel’s students are planning for a full-time career in the food-services industry, some of her students are pursuing a second career in the Culinary and Hospitality sectors.

Before turning to teaching, Ezekiel, who is from Avondale, N.L., cooked in different kinds of kitchens for a decade in her home province, everything from pub grub to fine dining to a long-term-care facility.

“The variety was really cool,” she says. “Fine dining is more unique and varied, but there’s a lot to be learned in institutional cooking.”

For example, Ezekiel worked with a staff dietitian to provide customized meals for around 200 residents at a long term care facility with special dietary considerations taken for each client.

Today’s Academy Canada students learn about dairy-free, gluten-free, nut-free, low-sodium, vegetarian and vegan diets, as well as diets to meet religious and cultural concerns from Kosher to Halal.

As dietary needs change, so do the skills needed to succeed in today’s Culinary, Tourism, and Hospitality sectors.
